The Autumn Italian Sausage Survival Soup

Ahhhhhh, I love the changing of the seasons from Summer to Fall. Some people love it and some people hate it, but I love the cool mornings and the afternoons in the 50s and 60s, changing leaves, football season (even though it looks different this year), and getting back to comfort foods.

Our family LOVES soup, especially in the Fall and Winter; however, my stepdaughters always want chicken noodle soup. I jazz it up a little bit differently each time, but it is still a boring soup to me unless you need the comfort when you are sick, so I am always looking for soup inspiration.

A friend recently had us over for dinner and she made an Italian sausage and vegetable soup that was very tasty! She sent me the recipe and I’ve adapted it with ingredients that my family loves…and the kids can add some ditalini or orzo cooked noodle to their bowls.

Soup is so easy because you can make it on the stovetop, in the crockpot, or in an Instant Pot. You can make it in advance or the day of; soups are easy and hard to mess up!

This is our Autumn Survival Soup that we are savoring on early this Fall!

  • 1 lb. sweet, mild, or hot Italian sausage (or a mix of two)
  • 1 small diced onion
  • 3 diced carrots
  • 2 diced ribs of celery
  • 1 large or 2 small diced zucchinis
  • 1-14.5 ounce can petite diced tomatoes
  • 1-32-ounce box of chicken or vegetable broth
  • ½ tsp each: dried basil and oregano
  • Salt and pepper to taste

In a Dutch oven on the stovetop, brown sausage until cooked. Drain fat. Add all other ingredients, cover, and bring to a boil. Reduce to simmer and cook about 30 minutes or until vegetables are tender.

This could easily be cooked in an Instant Pot or crockpot by browning meat first and then drain the fat. Add all ingredients and set your Instant Pot to pressure cook for 5-7 minutes or low for 6-8 hours in the crockpot.  

Add-in options after the soup is done cooking: cooked noodles or cooked rice. Top with parmesan cheese or avocado, cilantro, and shredded cheddar cheese.

Serve with a side salad and nice artisan bread from your grocery store.
